This was a great backbone recipe. I’m a veteran IP user and made a few adjustments simply based on what was on hand. I keep fresh frozen tomatoes to use all winter long- they were fine in place of canned. Sprinkled Penzey’s roasted garlic powder instead of sautéed fresh. I used roasted delicata squash instead of carrots. Had a few scoops of ricotta left over after another recipe- worked great for creaminess. My teenagers loved dipping their grilled cheese in the soup. The recipe is versatile- thank you!
