This is a healthier version of congee and even more flavoursome. I soaked some dried shiitake mushrooms first then used the juice to cook the rice in and also cooked the mushrooms in it too. Added loads of toppings like soy sauce, chopped chili, sprouts, mint, basil, broccoli and fish sauce.
