- 1 onion (Large, diced)
- 1 red bell pepper (diced)
- 1 jalapeño
- 1 can green chilis
- 2 tsp. minced garlic
- 15 oz. black beans (rinsed and drained or 2 cups Soaked Black Beans, two cups after the soaking, not before)
- 1 cup quinoa (rinsed and drained)
- 2 chicken breasts
- 2 cups vegetable broth (I make mine homemade in the Instant Pot!)
- 1 cup salsa (I use homemade salsa but any salsa will work!)
- 3 tsp. cumin
- 1 tsp. cayenne
- 1 tsp. salt
