- 10 oz. rotelle (diced tomatoes with green chilies I used mild)
- 1 1/2 cups chicken broth
- 1 1/2 tsp. Better Than Bouillon Chicken Base
- 1 1/2 lb. skinless chicken breasts (boneless, this was 2 chicken breast halves for me)
- 1 white onion (or yellow, diced)
- 2 Tbsp. seasoning (Hidden Valley ranch, not quite a whole packet)
- 1/2 tsp. garlic salt
- 1 tsp. paprika
- 8 oz. thin spaghetti (uncooked, I used whole wheat spaghetti)
- 4 oz. cream cheese (half a brick)
- 2 cups medium cheddar cheese (grated)

This has good flavor but unfortunately does not work at all with brown rice pasta. (I’m gluten sensitive). It sticks and gums up terribly, and I even added extra broth and water. Ended up throwing it out. :( I think I may try it again but boil the spaghetti on the stove while the chicken is cooking. The chicken came out very tasty and juicy. Will rate again after I make that revision. Attempt #2: I cooked the rice spaghetti on the stove and everything else in the instant pot. I did reserve about 1/2 cup of pasta water to help with thickening. I added the pasta and pasta water when I added the cream cheese and cheddar cheese. My teenage daughter wasn’t a big fan, but my husband and I really enjoyed it.
