- 2 Tbsp. unsalted butter (or avocado oil, 30 ml)
- 2 carrots (peeled and sliced into 1/2-inch rounds)
- 2 celery stalks (cut into ½-inch half-moons)
- 1 onion (chopped, either finely diced or bigger chunks, whichever you prefer)

Was pretty good, just a few adjustments. I should have just put fresh ground pepper in instead of the peppercorns. They were little surprises i didn't want in my bowl of soup. i did change one thing. I put the Instapot back on sauté while waiting for the chicken to cool. When it started boiling i added dry egg noodles and started working on the chicken. I let it sauté until the noodles were done.
