This is delicious! I only had a 19 oz. can of sauce, but it worked fine. We ate it as the main course, so I divided it into 6 portions. I mixed in a can of corn and some chopped red onion at the end. We topped with sour cream and avocado salsa. My husband ate his with fritos scoops!

Tasty and easy. I only had 10oz of enchilada sauce so cut the rice to 1 1/2 cups but used the full amount of seasoning. I do feel that it needs a bit more flavor but a good starting point. Paired it with chicken fajitas.

A quick and easy meal that is delicious. Even added pork to the pot. Shredded easily and went great with the rice.

Delicious, only that the rice turned out mushy, I used white rice at just ten minutes
