- 2 Tbsp. olive oil (you may use butter or ghee too)
- 2 tomatoes (Large)
- 1 onion (Large)
- 1 tsp. ginger (Chopped)
- 2 cloves garlic
- 1/2 tsp. turmeric powder
- 1 tsp. cumin powder
- 2 tsp. coriander powder
- 1 tsp. ginger powder (or use 1/2 tsp shredded ginger)
- 1/2 tsp. red chili powder (Indian, use as per taste)
- 1 tsp. salt
- 2 cups cooked brown rice (use any variety of rice or grain of choice)
- 1/2 cup cherry tomatoes (sliced)
- 1/2 cup purple cabbage (sliced)
