- 12 oz. salt pork (cubed, I typically use Hormel's brand and it is usually by the bacon)
- 2 Tbsp. duck confit
- 3 carrots (diced)
- 1 onion (diced)
- 2 celery stalks (diced)
- 5 cloves garlic (minced)
- 1 Tbsp. tomato paste
- salt
- pepper
- 1 Tbsp. fresh parsley (chopped or, 2 t dry)
- 5 sprigs fresh thyme (or, 1 t dry)
- 2 bay leaves
- 4 cups chicken stock
- 30 oz. white beans (I like giant white beans)
- 1/2 cup flour (all-purpose)
- 2 cups seasoned bread crumbs (italian)
