I agree with the writer that it's a bit mushy if taken with the full amount of water. Needed a healthy amount of seasoning afterwards but that also meant a good degree of customisation was available for everyone. Somewhat like Pho. Some didn't know about the offal and didn't comment which was enlightening for them. I'll make it again with a touch less liquid next time.

Turned out well considering I didn’t have thyme or creole seasoning. I will add more water to it next time since the rice was a little on the crunchy side
