- 2 Tbsp. olive oil (or coconut oil)
- 1 brown onion (large, finely diced)
- 2 medium carrots (diced small)
- 2 celery sticks (diced small)
- 2 tsp. salt
- 1/2 red chilli (long, finely diced, can be omitted)
- 2 1/4 lb. ground beef (grass-fed, I used 10-15% fat beef mince)
- 4 cloves garlic (diced)
- 1 tsp. paprika powder
- 1/2 tsp. cinnamon powder
- 1 tsp. onion powder
- 2 Tbsp. gluten-free soy sauce (Tamari)
- 1 tsp. fish sauce (don’t worry, you can’t taste it)
- 2 bay leaves
- 1 star anise (optional)
- 400 mL tomatoes (cans organic chopped tinned, with juice)
