Fantastic recipe that I obviously modified. I used ground beef and added a lot of chopped carrots instead of parsnips, chopped celery, a can of diced tomatoes, 11 ounce box of Quaker quick barley and 1.5 boxes of beef broth. Tasted wonderful. Next time I plan on adding chopped red bell pepper and spinach to add more color to the soup.
