- 17.3 oz. pastry (2 sheets thawed)
- 1 large egg (beaten)
- 2 Tbsp. unsalted butter
- 10 oz. mushrooms (finely chopped)
- 1/4 cup shallots (finely diced)
- 1 tsp. fresh thyme (plus more for garnish)
- 1/4 tsp. salt
- 1/4 tsp. pepper
- 1 Tbsp. vegetable oil
- 1/2 lb. flank steak

Directions
- Heat oven to 400*. On a lightly floured surface, roll out one puff pastry to 10"x10". Using a 2" round cookie cutter, punch out 25 circles.
- Brush each with beaten egg. Place on a cookie sheet, evenly spaced and bake at 400* for 12 minutes or until liquid has evaporated, stirring occasionally. Season with 1/4 tsp. of the salt and 1/8 tsp. of the pepper.
- Meanwhile, season steak with remaining 1/8 tsp. of pepper.
