- 1 Tbsp. oil (olive, butter)
- 1/2 onion (chopped)
- 3 celery stalks (chopped)
- 3 carrots (sliced thin)
- 1 green pepper (diced)
- 1/2 cup green peas (I usually use frozen)
- 1/4 head green cabbage (chopped)
- 4 cups cooked rice
- 2 cloves garlic (minced)
- 2 Tbsp. soy sauce (Bragg's, tamari, etc.)

- pepper
- diced chicken (Optional- Cooked, it's nice, though not necessary)
- 1/2 cup peanut butter
- 1 cup coconut milk (or ½ cup coconut cream, thinned with water)
- 2 Tbsp. lime juice
- 2 Tbsp. soy sauce (or alternative)
- 1 1/2 Tbsp. honey
- 1 tsp. ginger
- 2 garlic cloves (minced)
- 1/2 tsp. red pepper flakes
