  • 8 3/4 ounces ground chicken
  • 1 bunch broccolini (cut into 1/3 inch pieces)
  • 1 red bell pepper (deseeded, finely chopped)
  • 1 slice bacon (finely chopped)
  • 2 ounces frozen peas
  • 4 spring onions (finely sliced)
  • 14 ounces cooked rice (cold)
  • 3 tablespoons soy sauce
  • 2 tablespoons tomato sauce
  • 3 teaspoons sambal oelek
  • 1 teaspoon shrimp paste
  • 4 fried eggs
  • 2 tablespoons fried shallots

    Directions

    1. Grease a wok and heat over high heat, brown ground chicken for 4-5 mins, breaking up lumps with the back of a spoon. Set aside. Add broccolini, pepper and bacon and cook for 2-3 mins, until tender. Add peas and green onion and cook for 1-2 mins. Return ground chicken to pan along with rice, soy sauce, tomato sauce, sambal and shrimp paste. Cook until hot. Serve topped with fried eggs and fried shallots.
