- 1 1/2 lb. mushrooms (such as maitake and crimini or any mix you prefer)
- 6 Tbsp. butter
- 2 large shallots (finely chopped)
- 4 cloves garlic (finely chopped)
- 1 Tbsp. fresh thyme (finely chopped)

- 1/4 cup dry sherry
- 4 filet mignon steaks (2½ inches thick, center cut)

- 1 Tbsp. neutral oil
- 2 oz. brandy
- 4 tsp. Dijon mustard
- 1 pkg. puff pastry (Rach likes DuFour, defrost 2 hours in fridge before using)
- 1 scoop flour (to roll dough)
- 8 oz. pate (terrine or slab of peppercorn mousse, or truffle mousse pate)
- 1 egg (and about 2 teaspoons water, for egg wash)
