Nice flavor. Be careful not to overlook the potatoes or lentils or it turns into a pile of mush

This recipe is written poorly. All the flavors are there but if you don’t know how to cook it will come out wrong. The directions omit the lemon juice from the ingredients list, the recipe doesn’t allow for any liquid and cooking time for the lentils, and doesn’t call for salt and pepper.

good simple recipe! Tweaked it a little: sautéed the onion/garlic/spices in my pressure cooker pot, then threw in 1 cup dry lentils, 1 cup veggie broth, and the rest of the ingredients (except cilantro, coco milk and lemon). cooked on high pressure 15 min and let pressure release naturally. Stirred in coco milk and lemon juice afterwards and garnished with cilantro. Nice and quick!

I didn't have coconut milk, used regular one. Didn't have curry pasta I used curry powder and some paprika sauce and powder. Really good and simple!

Forgot that I didn't have canned lentils but used tempeh instead - this is now one of my favorite dishes!

Adjusted liquid volumes slightly as cooked both the potatoes and dry uncooked lentils (rather than canned) in the same pot to soak up the flavour. Delish!☺️

My wife and I really enjoy this recipe. We usually kick up the spice level a bit with some ghost pepper and roasted green beans. Never have had rice with it because it seems like an unneeded carb. We make this a least once a month.

Used whatever veg in fridge and sweet potato, yum would make again.
