- 2 cups yellow onion (chopped)
- 4 cloves garlic (minced)
- 3 Tbsp. chile pepper (seeded and minced jalapeño)
- 3 Tbsp. fresh ginger (peeled and minced)
- 16 oz. red lentils (rinsed)
- 1/2 cup cilantro leaves (chopped fresh, divided, plus additional for garnish)
- 2 Tbsp. cumin seeds (toasted, TIP: Substitute with 1 tbsp curry powder.)
- 1/2 tsp. coarse sea salt
- 6 eggs (hardboiled, peeled and sliced, TIP: If not using all)
- 6 eggs (servings at once, rinse, in cold water and refrigerate, with shell on, for up to 7 days.)
