- 1 fresh ginger (1-inch thumb, peeled and minced)

- 1/2 tsp. garam masala (store-bought or homemade, recipe follows)
- 1/2 tsp. ground cumin
- 1/2 tsp. cayenne (optional)
- 1 lb. ground beef
- 2 tomatoes (medium, chopped)
- ground black pepper
- kosher salt
- 1 cup English peas (shucked fresh, or 1/2 cup frozen peas, thawed)
- 2 tsp. malt vinegar (or apple cider vinegar)
- 1/4 cup chopped fresh cilantro (plus a few extra leaves for garnish)
- 4 pitas (or chapatis, warmed)
- 3 cinnamon sticks (large, if you have the kind you get at Indian stores, it's about 3 tablespoons of cinnamon bark bits)
- 3 Tbsp. whole cloves
- 1/4 cup green cardamom pods (shelled, husks discarded, about 2 tablespoons of seeds)
- 4 black cardamom pods (large, shelled, husks discarded, about 1 tablespoon of seeds, optional)
