- 500 grams mutton (or goat, cubed)
- 1 Tbsp. ghee
- 1 onion (large, roughly cubed)
- 3 garlic cloves (chopped roughly)
- 1 inch ginger (piece of, chopped roughly)
- 2 Tbsp. almonds (flaked)
- 1 Tbsp. cashew nuts (chopped unsalted)
- 1 Tbsp. sunflower seeds (unsalted)
- 1/2 cup milk
- 2 Tbsp. ghee
- 5 cardamom pods (green)
- 5 whole cloves
- 2 sticks canela (about 2 inches worth.)
- 2 bay leaves
- 1 star anise
- 1/4 cup tomato puree (around 75 ml, approx)
- 1 1/2 cups stock (hot, I used vegetable, as that's what I had on hand, 375 ml)
- 1/4 cup yoghurt (around 75 ml approx)
- 1/2 tsp. hot chilli powder
- 1/2 tsp. ground black pepper
- 2 tsp. salt (to taste)
- 1/2 tsp. saffron threads
- 1 Tbsp. milk (warm)
- 1/4 tsp. cardamom (crushed)
- 1/4 tsp. ground cloves
- 1/4 tsp. ground cinnamon
- 1/4 tsp. freshly grated nutmeg
- 1 cup stock (250 ml, to be used as necessary.)
- 1 handful freshly chopped cilantro (Large, to garnish, optional)
