So my BFF has been talking about making salsa for a couple of weeks now. She has all her garden tomatoes and peppers that needed a use! She told me she wanted something roasted, so I told her to throw all her stuff on a pan and bake it! It’s a lot like how I make my spaghetti sauces, so she was sketchy.
Talking to her about salsa made me want salsa! So I figured I would try out the recipe I proposed to her. I have a bumper crop of tomatoes and peppers, so I too needed a use for them.

Just throw your tomatoes, shallots, peppers, and garlic on a baking sheet and bake for half an hour. Then pulse in a food processor until you get the consistency you want. I like my salsa chunkier, but you can blend yours until it’s smooth and more restaurant-style.

- 12 tomatoes (cut in half)
- 3 shallots (large, cut in half)
- 10 garlic cloves
- 2 serrano peppers (cut in half & seeded if desired, otherwise left whole)
- 1/2 cup cilantro (or parsley if you prefer)
- 1/2 lime (juiced)
- 1/2 Tbsp. cumin
