- 2 aubergines (large, cut into large chunks)
- 1 tsp. dried oregano
- sea salt
- freshly ground black pepper
- 1 red onion (small, peeled and finely chopped)
- 2 cloves garlic (peeled and finely sliced)
- 1 bunch flat leaf parsley leaves (fresh, picked and stalks finely chopped)
- 2 Tbsp. capers (salted, rinsed, soaked and drained)
- 1 handful green olives (stones removed)
- 3 Tbsp. herb vinegar (best-quality)
- 5 tomatoes (large ripe, roughly chopped)

Absolutely delicious!
I made it with pistachio chunks because we were out of almonds.
I prepared the aubergine with oil and citruspepper, falafel, gyros and Italian herbs.
Added the tomatoes and olives/feta cheese chunks, and the nuts. And in a separate pan i baked the chicken with the same herbs and added the onion and garlic (1 piece) there.
Then threw it all together, added vinegar and let it simmer, and prepared some Moroccan spiced couscous with it.

Loved it and will def make again. Was out of capers and almonds but still turned out excellent. Surprisingly fast

Very tasty dish and easy to make. Added cumin instead of oregano that I didn't have. Turned out delicious!

Delicious!!! Will make it again. Added 1 zucchini too to make a bigger portions. Go easy on the salt!

Simple veggie meal with great flavours. Olive and capers provide most of the taste so avoid if you're not a fan.
