- 1/4 cup cooking oil (olive oil, canola oil, or vegetable oil)
- 12 oz. baby portobello mushrooms (sliced, 340g; AKA cremini mushrooms)
- 1/4 cup finely chopped onion (may substitute shallots)
- 3/4 cup chicken broth (homemade chicken stock, if possible)
- 1/2 cup prune juice
- 1 Tbsp. balsamic vinegar
- 1 Tbsp. light brown sugar (packed)
- 1/2 cup water
- 6 Tbsp. butter (unsalted butter or salted is fine)
- 1/3 cup chopped parsley

- 1 Tbsp. packed light brown sugar
- 1/2 cup water
- 6 Tbsp. butter
- 1/3 cup fresh parsley, chopped
