Ingredients

- 1 Tbsp. vegetable oil
- 12 oz. Impossible™ Burger
- 1/2 yellow onion (diced fine)
- 1 jalapeño (diced fine)
- 2 cloves minced garlic
- 1 poblano (diced fine)
- 1 tsp. chili powder
- 1 tsp. ground cumin
- 1 tsp. ground coriander
- 15 oz. San Marzano tomato (canned crushed)
- 1/2 cup heavy cream
- 8 oz. shredded Mexican blend cheese
- 1/2 bunch cilantro (diced fine)
- 1 lime (zest & juice)

Directions
- Start the vegetables: In a large pot, heat vegetable oil over medium/high heat.
- Add the Impossible™ Burger: Break up Impossible over the hot oil and sear until golden brown. Once cooked through, remove from pot and reserve.
- More vegetables: Add onions, jalapeños, garlic, and poblanos. Stirring frequently, cook until soft and aromatic, about 3-4 min.
