I didn't have yellow squash or zucchini, but I had 3 Mexican gray squashes, and they subbed nicely. I also added a quart of home canned tomatoes, and used packaged rather than fresh turmeric. We absolutely loved this hearty, colorful vegetable stew on a chilly January evening! It was even better on day 2. Delicious fare for vegetarians and omnivores alike!
