- 1 white onion (large, sliced thin lengthwise)
- 6 cloves garlic (peeled and chopped)
- bay leaf
- salt
- 3 lb. skinless boneless chicken thighs (I'm sure you could also use breast meat, but I don't think the resulting broth would be as flavorful)
- 1/2 cup pepitas
- 1 lb. tomatillos (husks removed and rinsed with warm water)
- 2 bunches fresh cilantro
- 1 tsp. epazote (dried, or dried oregano)
- 2 Tbsp. canola oil
- avocados
- lime juice
- radishes (chopped)

- chopped cilantro (additional)

i made this for my family for dinner and they all loved it! they all said they couldn't believe how delicious it was. I'll definitely be making this again!
