- 180 grams meat (raw salmon, /steak, or lots of salmon scraps, approx 500 g)
- 1 1/2 Tbsp. mirin (/Japanese sweet rice wine)
- 3 Tbsp. coarse sea salt
- 75 grams smoked salmon (finely diced)
- 3 Tbsp. mayonnaise
- 1 tsp. Siracha sauce
- 1 tsp. lime juice
- 1/4 tsp. chili flakes

Turned out great! The filling was just enough to offset the rice and it was a hit with my roomate!
