- kosher salt
- fresh ground black pepper
- 1/4 cup sweet paprika (do not use hot or smoky paprika)
- 12 oz. roasted red peppers (1 jar ,packed in water, drained and rinsed)
- 3 Tbsp. tomato paste (low or no salt)
- 3 tsp. red wine vinegar (divided)
- 2 Tbsp. vegetable oil
- 7 oz. mushrooms (small, sliced)
- 3 onions (large, diced small)
- 3 garlic cloves (minced)
- 1 Tbsp. fresh thyme leaves (or 4 fresh thyme sprigs)
- 14 oz. diced tomatoes (1 can ,low-salt, do not drain)
- 4 cups low sodium beef broth (3 to ,divided)
- 6 medium potatoes (small or 4, peeled and halved or quartered)
- 4 large carrots (cut into 2-inch pieces, optional)
- 2 Tbsp. cornstarch (optional for thickening if desired)
- 1/4 cup sour cream (optional - may be stirred in at the end or dolloped on individual bowls when serving)
