- 1 1/2 cups carrots (cut into 1 1/2-inch pieces, optional)
- 1 red bell pepper (chopped into ½-inch pieces)
- 14 oz. fire roasted diced tomatoes (don’t drain)
- 3 Tbsp. tomato paste
- 1 Tbsp. Worcestershire sauce
- 1 Tbsp. beef bouillon
- 3 cups low sodium beef broth
- 2 bay leaves
- 3 Yukon Gold potatoes (medium, chopped into ½-inch cubes)
- 1/4 cup low sodium beef broth (optional for thickening if desired)
- 2 Tbsp. cornstarch (optional for thickening if desired)
- egg noodles (or nokedli, csipetke)
- sour cream
- salt
- pepper
- freshly chopped parsley (optional)
