- 3 racks pork ribs (if you go to a Chinese butcher, they are cut ‘American’ style)

- 1 knob ginger (sliced)
- 1 handful shallot (small, ends)
- 1 stick cassia bark
- 2 star anise
- 375 mL light soy sauce
- 375 mL Shaoshing rice cooking wine (chinese cooking wine)
- 75 grams chinese rock sugar
- 1 Tbsp. Shaoshing rice cooking wine (or good medium-dry sherry)
- 1/2 tsp. salt
- 1 tsp. light soy sauce
- 1 tsp. dark soy sauce
- 1 Tbsp. potato starch (or cornflour)
- 1 3/4 cups peanut oil
- 2 tsp. minced ginger
- 1 Tbsp. finely chopped garlic
- 2 red chilies (fresh, seeded and finely chopped)
- 4 tsp. dried chili flakes (2 to)
- 2 Tbsp. cumin seeds
- salt
- 2 spring onions (green parts only, finely sliced)
- 1 tsp. sesame oil
