- 100 mL extra-virgin olive oil
- 1/2 tsp. ground turmeric
- 1/2 tsp. coriander seeds (crushed)
- 1 Orange
- 2 Tbsp. white wine vinegar
- 2 tsp. caster sugar
- 2 baby beetroots (each red and gold, peeled, thinly sliced using a mandoline)
- 30 grams fresh turmeric (peeled, finely grated)
- 3/4 cup Greek style yoghurt (thick)
- 1 cup hummus
- 50 grams baby spinach leaves
- 1/3 cup pumpkin seeds (pepitas)
- 1/3 cup sunflower seeds
- 1/2 cup green olives (Sicilian or other)
