- 500 grams plum tomatoes (fresh)
- 4 cloves garlic
- 8 chilli peppers (red jalapeno)
- extra-virgin olive oil
- 270 grams red onions (about 3 small)
- 2 Tbsp. soy sauce
- 2 tsp. smoked paprika
- 120 mL red wine vinegar
- 200 grams dark brown soft sugar
- 1 Tbsp. caraway seeds
- 2 tsp. coriander seeds
- 1/2 lime
- 2 bay leaves
- 5 cms fresh ginger (piece)
