- 1 cup mexican blend cheese
- 1 1/2 cups pico de gallo
- 6 eggs
- 1/2 cup red enchilada sauce

Directions
- 1. Preheat your oven to 375˚F/190˚C.
- 2. In vegetable oil, lightly fry your corn tortillas. Drain on a paper towel.
- 3. In a 9 inch cast iron skillet, arrange your lightly fried tortillas so they cover the bottom of the skillet.
