- 1/2 onion (large, or 1 small, roughly chopped)
- 1/4 cup cilantro leaves (fresh, a small bunch)
- 1 chipotle pepper in adobo (or 1 fresh chili, or more if you prefer hotter)
- 1/2 lime
- 16 oz. refried beans (can Rosarita, traditional, vegetarian or no fat)
- 4 tortillas (I used 8in corn tortillas but larger/smaller and wheat also ok)
- 2 Tbsp. vegetable oil
- 4 eggs
- 1 avocado
- 1 oz. cotija (cheese -, feta or cheddar suggested)
