Description
This was the first time I’d ever eaten huevos rancheros, let alone made them. I was told by my mom that they were not what huevos rancheros should be. That’s okay – they’re my made-up version and I’m good with that. They were tasty whether they were traditional or not. That’s the beauty of this recipe – you can make it whatever your want it to be. Want to add some avocado? Go for it. Got some ripe tomatoes? Add those suckers in there too.
Ingredients

- 2 tortillas (cauliflower)
- 1 sweet potato (large, cubed)
- 1 yellow onion (small, finely chopped)
- 1 Tbsp. olive oil
- butter-margarine (or coconut oil for frying)
- 4 eggs
- taco sauce (your choosing)
- salt

Directions
- Place your cauliflower tortillas in the toaster oven at 350 and set your timer for 10 minutes.
- In the meantime, place your chopped sweet potato and your chopped onion in a skillet drizzled with olive oil and placed over medium heat. Let cook for 10-15 minutes, until the sweet potatoes are soft.
- Once your sweet potatoes and onions are about 5 minutes from being done, heat another skillet or frying pan over medium high heat with your coconut oil, margarine or butter. Fry your eggs to your desired consistency. Season with salt and pepper.
- Assemble your huevos. Take your cauliflower tortillas out of the oven and place some of your sweet potato and onion mixture on top. Then place your eggs on top of that and your taco sauce yet on top of that.
- Taste for seasoning and enjoy!
