- 1 bunch green beans (julienne)
- 4 organic carrots (or 2 if not organic, julienne)

- 6 Tbsp. potato starch (dissolved in 1/2 cup water)
- 2 Tbsp. water (achuete or anatto powder, natural food coloring dissolved in 2 tbsp.)

- tofu (fried, seasoned with salt)

- lemons (for garnish, or squeeze it in when served to add a little zest, optional)
