I never have buttermilk on hand. I don't know if that's just my luck or if it's because I have a husband who just enjoys my Fluffy Buttermilk Pancakes a little too much. Either way, I'm always finding myself with none left in my refridgerator. We are the same, I'm sure. Well, honey I have some great news. It's the easiest thing to make in the history of food. It's fool-proof and all you need is some milk and a lemon, or in this case a lime.

- 1 cup milk (2%, Heavy Cream or Whole Milk)
- 1 tsp. lemon (lIme or Vinegar)

Directions
- You'll want to place your dairy in a bowl or cup and combine the lime or lemon juice into the bowl and mix well.
- Let it sit for about 5-10 minutes before you use it for your recipe. You'll know its ready when it thickens up. It might have little curds in there as well, and if it does then you should know you have done the damn thang honey. Your buttermilk is poppin' and ready to be used to make whatever yummy recipe you are preparing.
