Couldn't get to the Kitchen Stewardship site, but I minced the ginger in a little of the water with my blender, added the rest of the water and brought it to a boil on high with just a tad of sugar (two tsps.), then cooked it on low heat for an hour.
I strained the ginger out, put the water in the fridge. Now, I can add two lemons to it in the mornings and have it with tea or alone. Make a cup of green tea, add 2-3 tsps. of ginger water and the lemon. Great way to start your morning!
My changes were a composite of about 4 different "ginger teas".
