- dipping sauce (Dumpling, or Chinkiang vinegar)
- 6 shiitake mushrooms (medium, dried)
- 1/2 lb. raw shrimp (shelled and deveined medium-size, finely chopped)
- 10 oz. ground pork (20% fat)
- 1 small carrot (grated, yields about 1/3 cup)
- 4 green onions (finely chopped)
- 1 tsp. ginger (grated)
- 1 egg
- 1 Tbsp. sesame oil (toasted)
- 1 Tbsp. Shaoxing wine (or dry sherry)
- 1 tsp. salt
- 1/8 tsp. white pepper (powder)
