- 100 grams shelled prawns
- 1/4 lb. banana prawns
- 55 grams yellow onion (– peeled & rinsed 1.9 ounces)
- 30 grams carrots (– rinsed & peeled 1.1 ounces)
- 25 grams red capsicum (– rinsed & seeds removed 0.9 ounces, bell pepper, if necessary)
- 20 grams chives (– rinsed & stalks chopped in index finger length 0.7 ounces)
- 1 large egg white (extra)
- 1 tsp. rice wine (mirim)
- 1 tsp. white sugar
- 1 tsp. fine salt
- 2 Tbsp. potato starch
- 2 Tbsp. all purpose flour
- 3 cups vegetable oil (to 4 of, for deep frying)
