- leek (or green onions, if you have them)
- 1 leaf bay leaf
- 6 qt. cold water
- 1 Tbsp. salt (or to taste)
- 4 lb. chicken wings (backs, and/or legs, hacked with a cleaver into 2-inch pieces, you can ask your butcher to do this for you)
- 1 large onion (chopped)
- 1 Tbsp. olive oil
- 2 qt. boiling water
- 2 tsp. salt (or to taste)
- 2 bay leaves
