- 2 egg whites (lightly beaten, for brushing the shells to seal them )
- 4 cups ricotta cheese ( fresh, drained)
- 4 1/3 cups powdered sugar (the kind without starch)
- 3 drops vanilla extract (optional)
- 1 cup candied fruit ( , finely diced)
- 1 cup semisweet chocolate chips (plus more for decorating, if desired)
