Skip the store bought mascarpone cheese and make your own with this recipe for Homemade Mascarpone. Requiring just two simple ingredients, this recipe walks you step by step through the process of making your own creamy mascarpone cheese. Made with lemon juice and and whipping cream, be sure to pay attention to the milkfat content of the cream in order to achieve the correct texture in the end. Let sit for at least a day before using.

Directions
- In Thermomix 21 We put the butterfly and heat the cream to 90 ºC, about 6-7 minutes at speed 1½. Better to check with a thermometer that this temperature has been reached.
- When the cream is at the indicated temperature , add the lemon. We reprogram for at least 5 minutes at the same temperature and speed, and we monitor the evolution. You can see that it thickens somewhat, but in the case of ordinary cream (with a little less fat than indicated), it costs a little to perceive it.
- Bain-marie We heat the cream in a saucepan placed in another with boiling water . We will stir to homogenize while controlling the temperature with a kitchen thermometer.
