- 900 grams lamb shoulder (or leg cut into one inch pieces)
- 3 Tbsp. ghee (/vegetable oil)
- 3 onions (large, – finely chopped)
- 2 Tbsp. garlic paste (about 15 cloves of garlic mashed to a paste with a little water.)
- 1 Tbsp. ginger paste (3 inches ginger – grated and mashed to a paste with a little water.)
- 1 can chopped tomatoes (400ml)
- 1 Tbsp. cumin (powder)
- 1 Tbsp. coriander (powder)
- 1 tsp. chilli powder
- 2 handfuls baby spinach leaves
- 3 green chillies (– 6 fresh, I use a lot)
- 1 bunch fresh coriander (leaves)
- 2 limes
- 2 Tbsp. plain yogurt
- salt (and pepper to taste)
- 1 Tbsp. garam masala
