- 5 cups chicken stock
- 1 cup rice wine vinegar
- 2 yellow onions (peeled and roughly chopped)
- 10 garlic (corms crushed)
- 1/4 lb. pork (cut into thick chunks, omit for vegetarian recipe)
- 2 fresh ginger (x 1 inch chunk of, peeled and thinly coined)
- 6 chili peppers (hot, red dried)
- 1 Tbsp. black peppercorns (crushed)
- 1 star anise (corm, optional)
- 2 Tbsp. light soy sauce
- 8 shitake mushrooms (or tree-ear, chopped)
- 2 Tbsp. bean paste (black)
- 2 cups chicken broth (or water)
- 1/4 lb. pork (sliced)
- 2 tsp. dark soy sauce
- 2 Tbsp. sesame oil
- 4 garlic (corms, peeled and thinly sliced)
- 1 fresh ginger (x 1 inch chunk of, peeled and thinly sliced)
- 10 lily buds (reconstituted and sliced)
- 10 mushrooms (tree-ear, reconstituted & sliced)
- 1/2 cup bamboo shoots (julienned)
- 4 spring onions (chopped)
- 1 tsp. Sichuan pepper (crushed)
- 1 block tofu (sliced, about 1 cup, omit if you dislike tofu – it turns out fine)
- 1 egg (beaten)
