- 6 dried red chili peppers
- 2 Tbsp. soy sauce
- 2 tsp. sesame oil
- 4 Tbsp. apple cider vinegar
- 1 lime (juiced)
- 1 lb. bok choy (cleaned and coarsely chopped)
- soba noodles (bunched so that the ends stack up to about the size of a quarter)
- 1/4 cup cilantro (chopped)
- 4 green onions (chopped, optional)
- toasted sesame seeds (to garnish, optional)
