- 1 green bell pepper (large, diced)
- 1 red bell pepper (large, diced)
- 3 stalks celery
- 4 medium carrots (peeled and diced)
- 3 cloves garlic (minced)
- 2 tsp. smoked paprika
- 1 1/2 tsp. chili powder
- 1 1/4 tsp. kosher salt
- 1/2 tsp. cayenne pepper (plus additional to taste)
- 1 bunch kale (trimmed and chopped)
- 2 cans black eyed peas (15-ounce per can, drained and rinsed)
- 1 can fire roasted diced tomatoes (14-ounce per can)
- brown rice (Prepared, for serving)
- green onions (Chopped, optional for serving)

This was great. I did make a couple of minor substitutions - sweet potatoes, rather than carrots, and a couple of tablespoons of diced jalapeno peppers in with the green pepper. Worked very well for a New Year's Day dinner.
