- 1 clove garlic (minced)
- 1 jalapeno (ribs and seeds removed, diced)
- 1 lb. black eyed peas
- 1 cup ham (cubed)
- 4 cups chicken stock
- 4 cups water
- 1/2 tsp. salt (or to taste)
- 1/4 tsp. black pepper (or to taste)
- 1/4 tsp. red pepper flakes
- 1 bay leaf
- 2 1/2 cups rice
- 15.5 oz. peas (Canned Black Eye, drained and rinsed)
- 2 1/2 cups minute rice
- 30 minute rice (minutes, then add, and cook an additional 10 minutes.)
- 1 slice smoked sausage
