- 1/2 cup rolled oats (I used quick)
- 2 tsp. baking powder
- 1/2 tsp. baking soda
- 1/2 tsp. salt
- 1/4 cup unsalted butter (very cold, and cut into small chunks)
- 2 tsp. lemon zest (fresh)
- 1 large egg (beaten)
- 1/4 cup honey (I used wildflower honey)
- 1/2 cup buttermilk
- 1 tsp. fresh lemon juice
- 1 tsp. vanilla extract
- 1 Tbsp. unsalted butter (melted)
- 2 tsp. granulated sugar (or sanding)
