Great banana bread. Not too sweet and very moist. Uses much healthier ingredients than typical banana bread and tastes better, too. I used maple syrup instead of honey, and half unbleached and half whole wheat flour. I also added walnuts, though I have made it without walnuts and it is yummy. The recipe makes one loaf or 12 muffins. Finally, this recipe needs no adjustment for high altitude (8500 ft)...a huge point in its favor!!!
