Description
These easy chicken skewers glazed with ginger, honey, lemon, and soy sauce are sure to become a family hit. You can bake the chicken after only 30 minutes marinating, but if you have time, an overnight marinade will make the meat extra flavorful. The recipe is a Yummly original created by Stephanie Spencer.

- 1 lemon
- 1/3 cup honey
- 1/4 cup reduced-sodium soy sauce
- 2 Tbsp. fresh ginger (finely chopped)
- 2 garlic cloves (finely chopped)
- 1/2 tsp. black pepper
- 2 lb. boneless, skinless chicken breasts (or chicken thighs)
- nonstick cooking spray (or a little vegetable oil)
- 2 green onions (thinly sliced on the diagonal, for serving)
- toasted sesame seeds (optional, for serving)

Directions
- Zest and juice lemon and add both to a medium bowl. Stir in honey, soy sauce, ginger, garlic, and pepper to combine. Cut chicken into 1 1/2-inch chunks, add to honey mixture, and toss to combine. Cover bowl and refrigerate at least 30 minutes or until next day, stirring occasionally.
- Meanwhile, soak 6 bamboo skewers (8- to 10-inch size) in a shallow pan of water to cover for at least 30 minutes.
- Preheat oven to 375°F with a rack set in center and another rack set 2 inches from broiler. Line a sheet pan with aluminum foil and coat with cooking spray. Drain water from skewers. Thread 4-5 chunks of chicken onto each skewer and arrange skewers on sheet pan (keep marinade).

Delicious, once it cooked…took WAY longer than the recipe says and still never got there until I jacked the temperature up to 425.
